Apple Blueberry Almond Crisp

Topping

  • 1 tablespoon all- purpose flour
  • 1 2/3 tablespoons unsalted butter, cold
  • 2 tablespoons brown sugar
  • 1/4 cup oatmeal
  • 1 tablespoon homemade breadcrumbs (use whole-wheat or multigrain bread)

Filling

  • 2 Granny Smith apples, peeled, cored, and sliced
  • 1/2 cup blueberries (fresh or frozen)
  • 2 tablespoons unsweetened applesauce
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1 teaspoon lemon zest
  1. Preheat oven to 400° F. Prepare eight 2-inch ramekins with butter-flavored nonstick spray.
  2. Mix flour, butter, and brown sugar in a food processor and pulse 10-15 times to make a crumbly mix. Store in freezer until ready to use.
  3. Mix oatmeal, toasted almonds, and breadcrumbs in a food processor and pulse until coarse. Add to the brown sugar mix and store in the freezer until ready to use.
  4. Cook apples, blueberries, applesauce, cinnamon, vanilla, and zest of lemon in a saucepan over medium heat until apples begin to soften. Add filling to ramekins and add topping. Bake for 15 minutes.

Serves 8. Serving size 1/8 recipe. Preparation time 25 minutes. Cook time 15 minutes

Old Fashioned Peanut Butter Cookies

  • 2/3 cup packed brown sugar
  • 1/4 cup stevia
  • 3 tablespoons butter
  • 2 1/2 tablespoons non-hydrogenated buttery spread (-such as Active or Smart Balance)
  • 1/4 cup plus 2 tablespoons crunchy unsalted peanut butter
  • 2 tablespoons vanilla
  • 1 egg
  • 3 tablespoons water
  • 1 3/4 cup all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  1. Preheat oven to 350° F. Line 2 baking sheets with parchment paper.
  2. In a bowl, cream together the brown sugar, stevia, butter, buttery spread, and peanut butter until smooth. Add vanilla, egg, and water. Beat until combined.
  3. In another bowl, combine the flour, baking soda, and salt. Stir the flour mixture into the peanut butter mixture.
  4. Shape the batter into 1-inch balls and place them on baking sheets, 2-inches apart. Flatten the cookies with a fork.
  5. Bake for 8-10 minutes. Remove the cookies from the oven and cool.

Serves 36. Serving size 1 cookie. Preparation Time 15 minutes. Cook Time 8 minutes.
